How to make homemade pizza with yeast – The Accidental Recipe Modified

Homemade Pizza Introduction

I was making flat loaf plain bread as I had no confidence that I could make pizza. I was modifying the original accidental bread recipe bit by bit until today I managed to make a reasonably good pizza. Two years ago, when I knew nothing about making homemade bread or homemade pizza, I had tried many experiments but most of them were not on par and not tasty. This time around I have managed to convert the flat loaf plain bread into a nice pizza, using the Straight Dough method – that is everything mixed up together. The history of pizza shows that homemade pizza has been around for thousands of years. Pizza, if I am correct, is made from 50% bread flour and 50% plain flour and that is the reason it is not as tough as bread. I was a little worried that the homemade pizza dough would not rise sufficiently as this was the first time I was making 50:50 bread flour / plain flour mixture. Hence I added extra yeast, 2%, instead of the standard 1% yeast. Furthermore, I had added extra sugar for the yeast to make a lot more gases to enable the homemade pizza bread to rise. This recipe has a little butter to improve the flavour of the homemade pizza.

What pizza is pizza if you do not have tomato sauce? I have made a very simple basic sauce as I am not a good cook. This is a ‘foundational’ sauce which you can use to enhance with other herbs and spices to make more exotic tomato sauces and I will assure you that you will not go wrong with this simple sauce. It is reasonably tasty and can be the basis upon which you can come up with your own variations for your homemade pizza.

I was making this homemade pizza recipe at my mom’s house and as my mom is a vegetarian, I have not added any meat in the recipe. You could top up cooked meat or salami or sausages when baking.

Prepare the ingredients for the homemade pizza before making the pizza.

Stir all the ingredients, without the water, so that they are evenly distributed within the flour. The soft butter will not spread out uniformly but that does not matter.

Fold the sponge on itself until the ‘water breaks’ that is it does become slightly sticky. This will release as much gluten as possible to form a protein network to trap as much gases as possible when the dough is fermenting.

Drop the dough for the homemade pizza onto a sheet of baking paper. The dough will be sticky to touch and will look a little wet. You do not have to touch it with your fingers.

This is the trick to handle wet dough or high water content dough. Sprinkle some flour on the homemade pizza dough.

Rub some flour on the rolling pin and then roll the dough into a flat pizza looking shape. Use the baking sheet to lift the flattened homemade pizza bread dough and place it into a baking tray for fermentation. Don’t put it in the oven just yet. Allow it to ferment for 4 hours.

While we are waiting for the dough to rise let us make the homemade pizza tomato sauce.

As you can see, I was not taking measurements and I forgot to take photos as this was my first attempt at making tomato sauce, this year. Use a medium fire to fry the onions and garlic.

1. Slice the onions and begin frying the sliced onions.
2. While onions are frying slice up a clove of garlic.
3. When the onions are just turning brown add in the garlic.
4. Allow the onions and garlic to fry for a few more minutes. They will not be completely brown and plenty of white will show.
5. While waiting for the onions and garlic to fry use a sharp knife and stab or cut the tomatoes in the tin. There is no need to empty out the tin of tomatoes to do this or else you will have another bowl or plate to wash. Furthermore we want the water in the tin too.
6. Pour the tin of ‘stabbed’ tomatoes into the frying pan and let it simmer for a few more minutes.
7. Add the small tin of tomato puree into the frying pan – all of it.
8. Add the salt.
9. Stir well and let it simmer on a low fire for 20 minutes to half an hour for the sauce to thicken.

The thicken tomato sauce. Those yellow pieces are the sliced garlic. Do use the tin tomatoes as they make better tomato sauce then with the fresh tomatoes you can buy from the supermarkets. I think the tin tomatoes are a different species from the fresh tomatoes in the shops and they have a different flavour.

Slice the button mushrooms and leave them on a paper towel or cloth to dry. Preferably don’t use a paper towel, as I have done, as the paper will stick to the wet mushrooms. The drying is to prevent too much water getting onto the homemade pizza dough.

Apply the tomato sauce paste onto the homemade pizza dough. Use half the sauce to create a thick layer. This tomato sauce recipe can be used for two pizzas.

Warm up the oven for about 15 to 20 minutes before baking the pizza. Bake the pizza for 30 minutes at 210C (410F). I baked this pizza on the second slot from the bottom of the oven. I did not use the top grill of the oven only the heater from the bottom so that this recipe would work even in a gas oven and even if you did not have a pizza oven. Two years ago I had tried using both the bottom heater and the top grill for baking pizzas but that would always burn the cheese and I ended up baking the dough separately then baking with the topping a second time. With the above method there is no such difficulty in baking the homemade pizza. Sorry for the slightly out of focus picture as my pocket camera seems to be aging.
