In a previous article I had left out the cheesecake pastry when I mentioned that the absorb-ability of the flour is an important criteria when choosing which flour to use for you cheesecake pastry. I ran a few experiments after I found butter leaking out of the dough when baking and I managed to stop the dough leaking butter during bake. Today, I managed to make my pastry soft and buttery and absorb all the butter flavour without leaking out of the dough during baking. The secret was to use a 50%:50% blend of highly absorbent bread flour and self-raising flour. Interesting isn’t it that we can use bread flour to make pastry. The last experiment for cream cheese on cheesecake was very sour and this time around I focused on the cheese making process. I believe I had solved most of the problems caused by the sour flavour. And you are lucky that I delay publishing this recipe by three days. On the day I made the cream cheese from yogurt, the taste was OK and at least it was not extremely sour. I did make it into a cheese cake and ate a sliced or two every day. Wonder of wonders, I found that the taste improved by the third day and it tasted like cream cheese. This is the first time I had seen, with my own eyes, homemade cheese ripen or mature and it did taste pretty good. In fact those who tasted it thought I had used store bought cream cheese until explained that it was made from yogurt. The last experiment on cheesecake (see previous cheesecake recipe) went very wrong but it was a good experiment it that I accidentally made a nice salad sauce from the yogurt cheese. This time around I tried extra water in the dough and baked at a lower temperature and after a second bake (What you did a second bake? … Yes… because I was trying to recover from another disaster) the pastry was quite edible.
