I am a bit apprehensive about the latest brand of flour I am using as when I add 100% water it does form a thick batter. This should not be the case. Actually this is part 10 but as I did not publish experiments 4 to 9 I am calling this part 4. My mum has been complaining my bread is too hard so I have been experimenting with how to soften it without using oil. Notice many of my recipes of late have no preservatives, bread softeners or bread improvers. So it’s a little tougher to get it just right.
One of the options we have to soften the bread is to get it to rise more. As you know I am very adventurous with my breads … especially if I am planning to share it with someone else. I did mention my chilli bread experiment before and here is the recipe. I used a blend of high ratio flour and bread flour so that the bread would be softer.

I was in a bit of a mischievous mood when a friend of mine asked me to bake some bread for her. I know that she loves eating cherries so I thought I should give her cherry based bread. When I began mixing the ingredients I realised that I had not asked her if she liked her bread, hard, soft, savoury or sweet. If I had made her something with cherries it would definitely be a white bread and that means it would have to be a little sweetish. I have shown two similar recipes here on how to make bread with yeast but with improvements from previous recipe. They are provided as examples of water content and ease of making. Just a note, just before you do any food preparation and cooking do wash your hands thoroughly with soap and running water. This will reduce the chance of contaminating your food with germs and unwanted dirt that may make your food horrible to taste. The last yeast based wholemeal bread was slightly sweet but I did not reduce the sugar content. I reduced the bran content, accidentally. I guess, in my hurry, I was reading off the wrong row in my hand written recipe. The recipe shown here is the actual weight of ingredients used. As you have read, I have been attending baking school and am studying how to bake bread using yeast as the raising agent. There are two basic methods of making bread, the Straight Dough method and the Sponge & Dough method. The Straight dough method is basically, adding all the ingredients together and allowing the yeast to act before baking. The Sponge and Dough method uses about 70% of the flour, water and yeast to make the mixture rise – the sponge before the remaining 30% and other ingredients are added. Other then what I have mentioned, I will not elaborate further as there are many courses on baking and baking bread which extremely useful if you are serious and have a passion for making bread.
