Last month I raided my mom’s kitchen to make a sandwich for breakfast . There was nothing with a hint of meat in her fridge or larder so I tried something different.

I made a sandwich with cheddar cheese, dates and some hot anchovy chilli spread. It was delicious. Then I thought, wouldn’t that be a good homemade pizza. I was making flat loaf plain bread as I had no confidence that I could make pizza. I was modifying the original accidental bread recipe bit by bit until today I managed to make a reasonably good pizza. Two years ago, when I knew nothing about making homemade bread or homemade pizza, I had tried many experiments but most of them were not on par and not tasty. This time around I made the flat loaf plain bread using the Straight Dough method – that is everything is mixed up together. In the previous experiment (see how to make flat loaf plain bread with yeast part 2) I had made it using the ‘Sponge and Additives’ method (see how to make bread with yeast 3). Using the Straight Dough method is much easier but you need to take care if you are adding a lot of salt or a lot of oil / fats / butter. Yeast does not like salt, nor does it like oils, fats or butter.
